La -patate douce est cultivée pour ses tubercules qui servent d'aliment pour l'homme. On peut les préparer de très nombreuses façons : bouillis, frits, cuits sous la cendre, etc. Les tubercules servent également à préparer de la fécule, du sirop de l'alcool, de la confiture, etc. Certaines variétés sont très riches en amidon et, après cuisson, servent à l'alimentation du bétail. · Les feuilles peuvent se consommer sous forme de brèdes ou sous forme de condiments. Les tiges et les feuilles ont un grand intérêt comme fourrage vert pour les animaux, ou comme fourrage sec.
On cultive la pomme de terre pour son tubercule qui entre pour une grosse part dans l'alimentation de nombreuses populations, sous forme de purée, de frites, de compotes, salades, etc. De plus en plus, la pomme de terre subit des transformations industrielles avant sa vente : chips et frites vendus en paquets, purées déshydratées etc.
Le manioc (Manihot esculenta Crantz) est cultivé dans près d’une quarantaine de pays d’Afrique. En 2012, la production au Niger se chiffre à plus de 100 000 tonnes obtenues sur environ 7 000 hectares. Cette production représente près de 45 482 tonnes en équivalents céréaliers (Rép. Niger, 2012). Au vu de cette importance dans l’alimentation des Nigériens, toute menace sur la production doit être considérée comme une atteinte à la sécurité alimentaire, et de ce fait être sérieusement combattue. La plus grande contrainte biotique1 à la production de manioc au Niger est sans contexte la Mosaïque Africaine du Manioc (ou African cassava mosaic disease, ACMD), maladie qui sévit dans toutes régions productrices de notre pays.
